Tomato Soup
Ingredients
1 x tin of chopped tomatoes
1 x tablespoon of tomato purée
1 x carrot (chopped into small pieces)
1 x red pepper (chopped)
½ red onion (chopped)
1 teaspoon dried mixed herbs.
200ml Vegetable stock
Vegetable oil
- Fry the onions in the oil for 10 minutes until soft.
- Mix the tomatoes, purée, vegetables and mixed herbs together in a bowl.
- Add the vegetable stock and stir.
- Mix the onions with the soup in a large saucepan and bring to a simmer. Allow to simmer for 10 – 15 minutes until vegetables have softened.
- Pour soup into a blender and blend until smooth.
